Butchr Bar Finally Opens In Echo Park

Worth the wait…

After two years of LA red tape (as the story goes) + a pre-opening burglary, Butchr Bar, from Melbourne-bred couple Bridgette + Tyson Blackney, is finally open in Echo Park. Situated in an intimate corner space where Glendale Boulevard meets Court Street, the charming neighborhood butchery, restaurant, and natural wine bar touts a rotating selection of antibiotic-free and expertly dry-aged meats, butchered in-house to be enjoyed either at home or onsite.

Hailing from a legacy of international food imports/exportersdating back to 1920 with Tyson’s great grandfather Edward Alexander BlackneyTyson and Bridgette have harnessed their institutional learnings to provide a vertically-integrated model in Butchr Bar, serving the surrounding community with the finest products, placing sustainability and holistic health at the forefront. After all, according to the Blackneys, “food is medicine.”

The menu at Butchr Bar, crafted by the owners in tandem with Executive Chef Danny Rodriguez (of COBI’S) and Sous Chef Chianne Mallari (of Jeune et Jolie and Animae), showcases this emphasis on quality and health with a refined simplicity.

For lunch and dinner services, guests can anticipate starters such as bone broths and charcuterie platters of “seasonal” meats, which might include a dry-aged lamb or boar salami with house-pickled giardiniera and Clark Street bread. Additional small plates range from a picanha beef tartare with chili oil to fermented tomatoes, chop chop salad and a cheese selection of buffalo, goat and sheep varieties.

As for larger format offerings, guests can enjoy options like grilled pork and lamb sausages; 14-day dry-aged lamb with mint chutney + red miso; 25-day dry-aged wagyu with mostarda; and an ever-changing butcher’s cut of the day.

To complement the menu, Butchr Bar’s manager Henry Smith curated a list of natural and biodynamic wines by-the-glass + bottle from regions across coastal California, France and Italy. In addition to lunch and dinner, the team also plans to roll out a calendar of disparate events, classes and community programming in the coming months.

When it came to Butchr Bar’s design, Tyson and Bridgette aimed to reflect the same restraint and subtle playfulness of their food + beverage offerings, boasting an industrial 30-foot concrete slab bar, hand-poured to scale, set against cheeky yet soothing rose-hued walls. Tyson and Bridgette recruited Tyson’s sister, Addy Nuthalla highly sought-after designer for Pink Jam Trading in Australiato bring the couple’s vision to life within the 1,700 square foot space.

The stunning interior, meticulously executed by Addy, evokes her characteristic warmth + sophistication when approaching design. Rustic charm + modern touches are blended throughout the space by way of artwork gifted from friends back home one of which is a formidable painting at the butchery’s entrance now affectionately titled “Chop Chop”alongside pieces from up-and-coming artistic forces in Los Angeles, such as Alexandra Guardado. The oak communal table set in front of the bar, used for retail by day + dining by night, is a cherished Blackney family heirloom. This table, once the centerpiece of Tyson’s family dinners growing up, has been host to countless fond memories + now stands as a testament to the family tradition and rich history that flavors the Butchr Bar experience. 

The eight bar seats offer an up-close and intimate view of the artistry behind charcuterie and butchery, allowing guests to witness the craft firsthand. Six sculptural lamps crafted by the talented local ceramist Sasha Wachtel pepper the bar, while the charcuterie platters, plates, bowls + bone broth mugs are all crafted by another crop of LA-based creators at Still Life Ceramics.

Butchr Bar is open Wednesday through Sunday for laidback dining, imbibing and all meat procuring needs. Currently open for walk-in dining only, Butchr Bar can also be booked for larger format events, buyouts and private dining.
