Instead of dim lights and evening pours, the bar played host to an intimate midday whisky tasting celebrating the debut of Johnnie Walker Black Cask: the first new permanent expression to join the brand’s core lineup in 15 years.
Leading the afternoon was Dr. Emma Walker, the brand’s master blender, alongside West Coast Johnnie Walker Ambassador, Paul Jones. They guided the room through the lineup with insightful notes and stories that blended Scottish heritage with modern scotch whisky culture. A chic, communal setup of tasting tables greeted guests as they filtered in, each seat arranged with engraved wooden barrel pieces bearing the names of the whiskies we were about to explore.
Of course, before the tasting even began, there was one obvious first move: the bar. Walking into any event, the instinct is usually the same: make a beeline straight for the bartender, even if this was a Monday afternoon. While we knew a day of whisky tasting was already on the agenda, it felt only right to start with one of the signature cocktails. From the Black Cask Old Fashioned, to the Black Cask Gold Rush, the rotation kept drinks circulating and conversations flowing, easing everyone into the kind of warm, social energy that made the afternoon feel easy and intimate.

Crafted by Dr. Walker using specially selected whiskies from the heart of Black Label and aged exclusively in American white oak ex-bourbon barrels, this new expression reveals a sweet blend of vanilla and caramel undertone with a gentle spice and smooth oak warmth. We swirled the glasses, took in the aroma, and sipped slowly, letting the flavors evolve with each taste.
For those who don’t typically gravitate toward a heavy, smokey taste, Black Cask quickly stood out. The subtle sweetness and smooth finish made it an instant favorite at the table, bridging the worlds of Scotch and American whisky with an easygoing depth.

Dessert arrived in the form of a Jalisco orange flan finished with a Johnnie Walker piloncillo sauce, tying the meal back into the spirit that had guided the entire experience.
